Chicken meatball soup

Whether you are in your postpartum journey or you simply have some bellies to feed, this soup is your friend. It is so easy to make and is simple enough that even the fussy ones will eat it!

It is packed with gut loving bone broth, yummy herbs and juicy as hell meatballs. I hope you enjoy it!

Ingredients SOUP

  • 5 cups bone broth

  • 2 carrots - peeled and chopped

  • 1 brown onion - chopped

  • Any other veggies you have in the fridge can be chucked in too

  • Fresh rosemary, parsley & thyme - chopped

  • 1 lemon - rind and juice

  • Salt & pepper

Ingredients MEATBALLS

  • 1kg chicken mince

  • breadcrumbs (amount depending on how wet mince is, you’ll need to wing this one)

  • parsley & rosemary - chopped finely

  • Salt & pepper

  • Good chunk of butter

Method

  • Mix all ingredients for the meatballs in a bowl apart from butter, making sure they are not too wet as they will fall apart. Roll into meatballs.

  • Put butter into a casserole or frying pan and fry up meatballs on medium heat until golden on outside. Then put aside on a plate.

  • Add more butter if needed then lightly fry onion & veggies.

  • Add the bone broth, herbs & lemon rind + juice.

  • Let is simmer a for a while and taste. If very lemony, add some more salt.

  • This is a good time to chuck in some pulse pasta or rice if you’re wanting to add this straight into the dish.

  • Then add meatballs and ensure they cook all the way through.
